Which E-numbers matter for your allergy? Mostly, fewer than you'd fear: the additive system is largely allergen-free, and the law requires the 14 declared allergens to be emphasised on every UK and EU label. But a handful of additives genuinely can involve milk, egg, soya, fish or sulphites — and knowing that short list removes a lot of label anxiety.
